Make This Now: Caramelized Sweet Potatoes

What to do with all of those sweet potatoes left over from your Thanksgiving feast? Let SpringHouse Restaurant Executive Chef Rob McDaniel help! This deliciously simply sweet potato dish is great as a savory side or a delicious twist on dessert.

Ingredients
1 sweet potato, roasted, peeled and cooled
1 TBS bleu cheese
1 TBS honey
2 TBS olive oil
1 teaspoon unsalted butter

How to prepare:
Heat olive oil in a cast iron skillet on maximum heat until slightly smoking. Place the sweet potato in the oil and slightly mash it down. Allow the potato to slowly cook until golden brown on one side, about 8-10 minutes, then flip, add butter and slowly cook the other side the same way. Once the potato is golden brown on both sides, place on a plate, sprinkle with bleu cheese, drizzle with honey, and serve!
